‘Nirvana’, was how Hugh Fearnley Whittingstall described a classic Blistering buffet some years ago at a friend’s wedding. We think so too. Our buffets are designed to please everyone from carnivores to vegetarians, from seafood lovers to spice addicts.

SAMPLE MENU 1

  • Whole Portuguese Spicy Piri Piri Chicken
  • Butterflied Provençale Leg of Lamb marinated with Lemon Zest, Rosemary and Garlic
  • Whole Sides of Salmon with Thai Spices, Lemon Grass, Lime Leaves, Galangal and Thai Basil
  • Butternut Squash with a Warm Spice Crust, Goat’s Cheese, Spring Onions and Toasted Pumpkin Seeds
  • Baby New Potato Salad infused with Dijon Mustard Vinaigrette, Shallots and Fresh Parsley
  • Baby Spinach and Rocket Leaves dressed with Lemon Juice and Sea Salt
  • Tomato, Cucumber and Melon Salad with a hint of Fresh Chilli dressed with a Herb Vinaigrette

SAMPLE MENU 2

  • Thai Chicken marinated with Lemongrass, Lime Leaves, Ginger, Chilli and Fresh Coriander
  • Whole Sirloin or Fillet Hong Kong Style rubbed with Szechwan Peppercorns and Chinese Five Spice marinated in and basted with Soy-miri
  • Blackened Seared Loin of Tuna marinated in Teriyaki, Mirin and Pickled Ginger coated with Szechwan Pep percorns
  • Chargrilled Bok Choi and Red Peppers marinated in Thai Lime, Chilli & Coriander Syrup
  • Saffron Lemon Rice with Mustard Seeds and Coriander
  • Thai Salad with Green Papaya, Spring Onions, Red Peppers and Green Beans
  • Baby Leaf Salad with Mushrooms, Water Chestnuts and Chinese Broccoli
  • Cucumber, Bean Sprout, Pickled Yellow Radish and Pineapple Salad with Mild Red Chilli & Mint dressing
